We love avocado. No matter if it’s starring in guacamole, thickening our soups, or topping our burgers, we just can’t get enough of it. And for fitness and food enthusiast like us, it’s actually good a good thing that we like it because they are packed with health benefits. What are those benefits you might ask? Well for one, avocado is packed with protein. Just one average sized Hass avocado gets you 4 grams of protein. Avocado and more specifically it’s oil is a natural fat burner. Avocado oil is rich in monounsaturated and oleic fatty acids, which can spot reduce abdominal fat, one of the toughest places to get rid of fat on your body. Another great health benefit is that they are a great source of potassium. A 3.5-ounce serving has more potassium than a banana. Lastly, it contains one of the richest sources of vitamin E, which is great for the health of your skin. Ladies, if you want smoother, clearer, more radiant skin, try cooking with avocado oil. Remember to shave with coconut oil while you’re at it.
With so many health benefits, we try to get avocado in our meals on a regular basis. One of the best ways to do this is with our Creamy Avocado-Tomato spread. This spread is great on toast, but can also be stuffed inside some chicken breast, used as a condiment for a burger or sandwich, or as a dip for your veggies. It’s super easy to make and is ready is less than five minutes. All you need is a food processor (or some pent up aggression paired with a good fork).
Here’s how to do it:
- 2 Hass avocados
- ½ cup of Organic coconut milk (Canned, full fat)
- 1 cup grape tomatoes
- Salt and Pepper to taste
- Cut each avocado in half. Remove pit and scrape out flesh into the bowl of an 8-cup food processor.
- Slice grape tomatoes in half. Add into the food processor.
- Add in coconut milk.
- Season with salt and pepper.
- Pulse ingredients together until all ingredients are combined and desired texture is achieved.
That’s it. A super easy spread that is packed with nutrients that can be used in a number of different ways. You can customize your spread even further by adding cumin and cilantro. You can also add the juice of one lime for a more tart taste. If you want to add a little more crunch, try adding shredded carrots or jicama.
